Apricot-Almond Cream
The Apricot-Almond Cream Recipe
2 gelatin sheets (4.4 g)
330 g apricots, halved and pitted
138 g sugar
66 g blanched almonds
28 g almond syrup
2 tbsp (22 g) still mineral water
330 ml heavy cream
Prepare the Gelatin – Soak the gelatin sheets in cold water for about 5–10 minutes until softened.
Make the Apricot Purée – Toss the apricots and sugar into a bowl and blend with an immersion blender until smooth. A standard blender or food processor works too.
Prepare the Almond Mixture – In a saucepan, combine the blanched almonds, almond syrup, and mineral water. Blend lightly until it has a slightly grainy texture.
Warm and Mix – Heat the almond mixture over low heat, stirring occasionally.
Incorporate the Gelatin – Remove the softened gelatin from the water, squeeze out excess moisture, and stir it into the warm almond mixture until fully dissolved. Take the pan off the heat and let it cool.
Combine the Mixtures – Pour the almond mixture into the apricot purée and blend everything together with a spatula.
Whipped Cream & Assembly
Whip the Cream – Beat the heavy cream until it holds soft peaks.
Fold it In – Carefully incorporate the whipped cream into the apricot mixture in batches, folding gently to keep it airy.
Chill – Pour the apricot-almond cream into serving glasses and refrigerate for at least 2 hours, allowing it to set.
Finishing Touches
Caramelize the Apricots – In a small saucepan, melt sugar over medium heat, stirring constantly until it turns a light amber color. Add a small piece of butter to stop the cooking process.
Coat the Apricots – Toss in halved apricots and stir to coat them in caramel.
Cool & Serve – Let the caramelized apricots cool slightly before placing them on top of the chilled cream. Finish with a sprinkle of chopped almonds for a satisfying crunch.
